The Hearth
During Lulu's second year, Philippe Corbet traveled to Tel Aviv. Twenty restaurants in five nights, and one obsession: live fire. He came back to Sag Harbor and rebuilt the menu around a single wood-fired hearth at the center of the kitchen — visible from the dining room, in service every night. Oak, ember, smoke. Every plate that leaves the pass has been touched by one of the three.

Aged in-house for fourteen days, then off the hearth. Carved tableside.

The Cellar
A French heart — Burgundy, Rhône, Bordeaux, Alsace, the Loire. Prestige champagnes from Roederer, Ruinart, Billecart-Salmon. A private-label Provence rosé poured from Château Saint-Maur. Curated for the food, never for the label.

Lobster off the boats at our sister docks. Picked, cracked, on a Lulu plate the same day.

Cold-water oysters farmed across the bay. Shucked to order at the raw bar — never frozen, never trucked.
